Jilin
Jilin Province is located in the far northeast of China. The climate is characterized by extremely cold winters with temperatures often below -30 °C. Due to the extreme temperatures in winter, the vines often have to be covered in winter. The first winery in this region of China was founded in 1937.
In order to endure in Jilin, the grape varieties must be well suited to the low temperatures. Therefore, native grape varieties such as Vitis Amurensis are particularly suitable for cultivation in this region. The Beibinghong grape variety, a crossing of Vitis Amurensis and Vitis Vinifera, which is particularly resistant to cold, is particularly well known. Special attention is paid in Jilin to the emerging "ice wine" culture. To make ice wine, the grapes are left to hang until the first snow and are then harvested frozen, at around -8 °C.
